Cheesy Broccoli Soup, I would have to say, is the most popular homemade soup in my household. The high level of appeal comes from the warm, cheesiness of it. While the broccoli is tasty, it is not what everyone is getting excited about! Don’t get me wrong, the broccoli is an integral part of this recipe. All I am saying is that the creamy cheese is clearly the big hit.
Trial and error is what it has taken to create Cheesy Broccoli Soup. I have tried versions that were lower calorie, some with shredded carrots, others with too much cream that turned it into broccoli stew and others that had no cream at all….not a good idea, I might add! This is the best recipe to date and is a combination of all the other attempts that weren’t as perfect as I had hoped they would be.
The addition of shredded carrots to this recipe resulted in soup which had a very unappealing colour. The best alternative would be to add diced carrots which will allow the carrots to keep their colour all to themselves!
Experience leads me to my next tip to not try to turn this recipe into a lower calorie one. It is really not advisable and certainly not very tasty. You want this soup to be creamy and a tad on the decadent side. If you use skim milk, it becomes a lot more runny and not nearly as appetizing. I am not even going to tell you what it tasted like with just broth!! Just say no, don’t do it!
An important cooking tip to take notice of is to be sure not to overcook the broccoli. You want to achieve a nice level of broccoli crunch combined with a little tenderness to create amazing Cheesy Broccoli Soup. This can be a bit tricky but what should be noted is not to let the soup cook for too long. It is not the type of soup recipe that requires long cooking time. I guarantee you that Cheesy Broccoli Soup will be delicious and ready to eat in no time at all!
It’s time to get cooking! Here is the recipe which includes ingredients that you will likely have on hand. Other than a little chopping, Cheesy Broccoli Soup will come together quickly. It is a great choice for hectic weeknight dinners.
- 2 Tbsp Olive Oil
- 4 Tbsp Butter
- 1 Cup Onion, diced
- 2 Cloves Garlic
- 1/3 Cup Flour
- 3 1/2 Cups Milk, anything but skim
- 2 Cups Chicken Broth
- 4 Cups Broccoli Florets, chopped
- 1 Tsp Seasoning Salt
- 1 Tsp Pepper
- 1/2 Tsp Paprika
- 1 Tsp Dry Mustard Powder
- 2 Cups Sharp Cheddar Cheese, Grated
- 1/3 Cup Parmesan Cheese
Add the oil to a dutch oven, and over medium heat, add the onions and cook til softened, about 3-5 minutes. Add in the garlic and continue cooking for another minute or so. Add the flour and mix thoroughly with the onion and garlic. While whisking, slowly add in the milk and chicken broth. Continue to cook, over high heat, stirring constantly, until mixture begins to boil. It is very important to not stop stirring while the temperature is high as the milk burns quite easily. Once you have reached a boil, immediately reduce the heat to medium-low and continue to stir until it has stopped bubbling. Add in the remaining ingredients except for the cheese. The soup will thicken up nicely as you continue to cook. Keep soup at a low simmer until the broccoli is cooked, about 5-7 minutes. Turn the heat to low and add in the cheeses and more salt and pepper if needed.
