Chocolate Oatmeal Macaroons are one of those recipes that have been around forever and still are amazing! This recipe goes way back – like way, way back to when I was a kid. These no-bake drop cookies were one of my first attempts at baking. It was my sister who first introduced my family to these tasty treats. She liked to make a batch on a Saturday along with homemade pizza. I think, if memory serves me correctly, she was taught how to make Chocolate Oatmeal Macaroons in a home ec class. Suffice it to say, it was a memorable class for us all, oh so long ago! I have made these cookies about a million times and for just about every occasion. They have been made for showers, birthday parties, weekend sleepovers with my niece when she was little and just for no good reason at all! These cookies will give you that chocolate fix you need and with just minimal effort. I can guarantee you that no matter what the reason is that you’re making them, they will be a huge hit AND consumed in record time. You might just want to consider making a double batch! I’m just trying to be helpful – they will go quickly!
The one important note I want to mention when you’re making these cookies is to be sure to let the butter mixture boil for the full two minutes as the recipe indicates. There is some sort of cookie magic that occurs which ensures that the cookies are just the right texture. If you try to cheat on the boiling time, they just don’t turn out quite right. This is a fact that I have had to learn the hard way!

- 2 Cups Sugar
- 1/2 Cup Milk
- 1/2 Cup Butter or Margarine
- 3 Cups Quick-Cooking Oats
- 1 Cup Flaked Coconut
- 6 Tbsp Cocoa
- 1 Tsp Vanilla Extract
- 1/4 Tsp Salt
In a large bowl, combine the oats, coconut, cocoa and salt and set aside. In a medium saucepan, mix the butter, sugar and milk over medium-high heat. Be sure to stir constantly until the mixture boils. Let the mixture boil for 2 minutes before removing from heat. Add in the vanilla and the oats mix and stir to combine. Working quickly, drop by the tablespoonful onto waxed paper-lined baking sheet. Refrigerate for one hour before eating.
