Classic Macaroni Salad is the perfect addition to your summertime BBQ or picnic! The tangy dressing along with the fresh ingredients makes this salad a great addition to any gathering.
Classic Macaroni Salad really goes hand in hand with summertime and outdoor events like family get-togethers. It is so easy to pack up and take to the park or beach. Now, I know that it’s tempting to just stop at the grocery store and pick up macaroni salad that is pre-made but I can guarantee you that it will NOT taste as good as this homemade version will. Honestly, it doesn’t take that much time or effort to make it at home. You could make it ahead of time and refrigerate it until you are ready to enjoy it! It can be completely assembled beforehand which is really not possible with salads that have lettuce in them, for example. You need to keep the dressing separate so that the lettuce doesn’t get all wilty and floppy….. not very appealing, really. Classic Macaroni Salad can withstand the application of the dressing. Actually, it allows the flavours to meld together beautifully if it is can sit for a few hours in the fridge before serving. I say, make life simple…..do all of the preparation at home, pack it up in the cooler and away you go!
I made some not too long ago for friends and one of the comments (besides, I Love It!) was how much they liked the addition of the celery to the recipe. The crunchiness of the celery was very appealing and complimented the rest of the recipe ingredients very nicely. I love the addition of grape tomatoes to this recipe. I use grape tomatoes specifically because of their firm texture. They are able to withstand the salad dressing disintegrating them into tomato mush. They are able to keep their crunchiness much better.

- 1 3/4 Cups Macaroni, uncooked
- 1 Cup Celery, finely diced
- 1 Cup Red Pepper, finely diced
- 1 Cup Grape tomatoes, halved
- 8 Ounces Cheddar Cheese, cut in cubes
- 1/4 Cup Red Onion, finely diced
- 4 Large Eggs, hard boiled, diced
- 1 Cup Mayonnaise
- 2 Tbsp Vinegar
- 1 Tbsp Dijon Mustard
- 1 Tsp Sugar
- 1 Tsp Seasoning Salt
- 1 Tsp Onion Powder
- 1 Tsp Pepper
- 1/2 Tsp Dried Dill
- Paprika for topping
Cook Macaroni according to package directions, rinse, drain and set aside while you make the dressing and cut up the veggies. In a medium bowl, whisk together mayo, vinegar, dijon, sugar, salt, onion powder, pepper, and dried dill. Combine the macaroni, veggies, hard boiled eggs, cheddar and the dressing. Stir well to combine all ingredients. Sprinkle with paprika and allow to chill for at least one hour.

Topping off the Classic Macaroni Salad with a light sprinkle of paprika add just a little bit of a kick to the dressing. You can leave it off if you are not a paprika fan. It also makes the salad such a pretty colour!
