Creamy Chicken Chorizo Pasta is a delicious pasta dish that tastes like you spent hours in the kitchen but really, takes no time at all to prepare. The one ingredient that really elevates this recipe to rock star status is the addition of whipping cream. This is what will make Creamy Chicken Chorizo Pasta a household sensation. That, coupled with spicy Chorizo sausage and sun-dried tomato pesto, and voila! You have yourself a mouth watering pasta dish that will leave your family thinking you’ve been secretly taking cooking classes! The great thing is that, in reality, this recipe comes together quickly and is a great choice on a busy weeknight.
It is important to note that there are a variety of options in the type of chicken you can use for this dish. I used pre-cooked buffalo chicken nuggets that I bought which were already seasoned and ready to just toss in. I love the little kick of spiciness that these nuggets added to Creamy Chicken Chorizo Pasta. There are many different varieties you can buy of chicken nuggets or strips so you can really experiment and try different ones. If you’re really feeling energetic, you could add sliced uncooked chicken breast, marinated in your choice of marinade (one with lots of garlic would work really well here), then sautéed. This would be a great option as well.
I chose to use sun-dried tomato pesto to change things up a little. Regular basil pesto could very easily be substituted if you prefer but I really think you should give sun-dried tomato pesto a try. It’s so good! I found it sitting right beside the basil pesto at the grocery store.
One other tip that I would like to pass on is that it’s important to rinse the pasta with hot water before you add it to the remaining ingredients. If you don’t rinse it, the pasta can get a little too thick and sticky once it’s been added to the rest of the ingredients. Giving the pasta a quick rinse will avoid this happening.

- 2 Cups Fusilli, uncooked
- 1 Cup Onion, diced
- 3-4 Cloves Garlic, minced
- 1 1/2 Pounds Chicken Nuggets, Cut into Bite-Sized Pieces These nuggets or chicken strips would be pre-cooked
- 3/4 Pound Chorizo Sausage, sliced
- 2 Cups Whipping Cream
- 1/4 Cup Parmesan Cheese, grated
- 1/3 Cup Sun-Dried Tomato Pesto Basil Pesto would also work here
- 1/4 Cup Fresh Basil Leaves, chopped
- 1/4 Cup White Wine or Chicken Broth
- 2 Tbsp Butter
- 1/2 Tsp Salt
- 1/3 Tsp Pepper
Cook fusilli pasta according to package directions. Cook 2 minutes less than recommended time so that when it is added to the rest of the ingredients, it will not get mushy from over cooking. While the pasta is cooking, in a medium skillet, fry the Chorizo until nicely browned and set aside. In a large skillet, add the butter and once it is melted, add the onions and cook for 3-5 minutes , until softened. Add in the garlic and continue cooking for another minute or so. Add in the sun-dried tomato pesto and wine and stir to combine. Turn up the stove to high and slowly add in the whipping cream, whisking constantly so that it doesn't burn. Continue to whisk until the mixture comes to a boil. Turn the heat down to medium, add in the Parmesan, salt and pepper and allow the sauce to thicken up. Add in the diced chicken, Chorizo and pasta and continue cooking until it is heated through. If you find that the sauce is too thick, add in a little more wine/chicken broth to thin slightly. Finally, just before serving, add in the chopped basil. Serve immediately. Top with more Parmesan if desired.
I really like to add fresh herbs to my pasta dishes so feel free to add in some parsley, oregano and thyme if you like. Dried herbs such as Italian seasoning is also a good addition to this dish.
