Savoury yellow rice is a great accompaniment to my recipe for Curried Chicken Skewers. The delicate combination of spices with an Indian flare give this savoury yellow rice dish just the right amount of flavour. It makes it the perfect match for the Curried Chicken Skewers. It is just so much more exciting than plain old white rice! All that it requires is a few more ingredients than you would use if you were just making white rice.
This recipe could easily be adapted into a wrap simply by adding the chicken, rice and a little of the curry bbq sauce into a tortilla. It would be great for lunch! The recipe for curry bbq sauce can be found along with the recipe for Curried Chicken Skewers. Savoury yellow rice would also work well with just about any chicken dish you would like. It does not have an overpowering flavour of curry but is really more subtle.
- 2 Cups Jasmine Rice I like to rinse the rice 2 or 3 times first before cooking
- 3 Cups Chicken Broth You can substitute vegetable broth for the chicken broth if you prefer
- 1 Tsp Tumeric
- 2 Cloves Garlic, minced
- 1/2 Tsp Cumin
- 1 Lemon, juiced
- 1/4 Cup Fresh Parsley
- 1/2 Tsp Dried Oregano
- Pinch Salt
Bring broth, lemon juice, garlic, tumeric, cumin, oregano, salt & pepper to a boil. Stir in the rice, turn the heat down to simmer, covered for 15 minutes. Remove lid, and let it sit off the heat for another 10 minutes. Fluff with a fork, stir in the parsley and it's ready to serve!
