Slow Cooker Shredded Fiesta Chicken is so easy to whip up with very few ingredients required. All you need is a slow cooker and some time for it to cook. This recipe can be used in a number of different dishes. It would be great as the base for burritos, quesadillas or on top of a plate of cheese covered nachos, just to name a few.
The chicken breasts go into the slow cooker whole and once they have finished cooking, then it’s time to shred it. The chicken is so tender which makes it very easy to shred. You can freeze it just like that if you like. As well, you can add other ingredients to it when you’re ready to use it to make quesadillas, for example. I like to prepare the chicken so that it’s all ready to go when I take it out of the freezer. Either way works great.
This recipe for Slow Cooker Shredded Fiesta Chicken came about out of my on-going pledge to waste as little food as possible. I decided to try out a different type of ready made salsa recently and was met with many complaints from the family. So, I thought, what can I do with all of this salsa that really tastes just fine but perhaps was not quite as thick in consistency as my family is accustomed to thus making it inedible in their minds? My first thought was to try to incorporate it into some sort of Mexican-themed dish. Off to Pinterest I went to see what I could come up with. Most of what Pinterest had to offer was casserole inspired. While I love a good casserole, the rest of the family is not really keen on them. So, I thought that what would be a better choice for the salsa was to prepare some chicken breasts which could be added later to any number of dishes, perhaps even a casserole!
You really cannot go wrong with this recipe. It is easy to make and very versatile. You will find all you need to know in the recipe below!
- 6 Chicken Breasts, boneless and skinless
- 1 16 oz jar Salsa
- 1-2 Tbsp Taco Seasoning
- 1 Tbsp Chili Powder
- 1 Tsp Cumin
- 1 Can Diced Green Chilies
In a small bowl, combine the salsa, taco seasoning, Chili powder, cumin and diced green chilies. Place the chicken breasts in the slow cooker. Top the chicken breasts with the salsa mixture. Cook the chicken breasts on low for 6-8 hours or on high for 3-4 hours. Once the chicken is cooked through, remove from the slow cooker and shred using two forks. You can feeeze it at this point if you would like to.
Admittedly, this picture is not my finest work! However, I wanted to demonstrate to you the chicken in the slow cooker pot with the salsa mixture on top. It may not look amazing right now, but trust me, it will be in a few hours!
