Cheesy Bacon Frittata is a great way to start your morning, enjoy for Sunday brunch, or even for dinner on a busy weeknight. It is simple to make and really delicious.
Cheesy Bacon Frittata is a tasty, versatile dish that your family is going to love! The most obvious choice is to enjoy this egg casserole for breakfast or brunch but, here’s the thing, it’s also great for dinner. Eggs for dinner every now and again is a good idea! You can prepare Cheesy Bacon Frittata in minimal time which is what you want on a busy weeknight. Even better is to prepare it ahead of time so that when you get home from work, all you need to do is top it with shredded cheese and pop it in the oven. It will keep well in the fridge until you’re ready to cook it. I recommend waiting to add the shredded cheese to the top of the frittata until you are ready to bake it.
I prefer to use bacon in this recipe but it would also go well with turkey bacon, breakfast sausage or Canadian bacon. All of these would have to be cooked prior to adding to the dish just like you would if you are using bacon. I love using Spudlers in this recipe because it makes it even simpler to prepare. What are Spudlers you ask? Well, is prepared breakfast hash that you can find at Costco in the freezer section. In addition to diced hash browns, there are peppers, onion and bacon added to it. I have given recipe instructions for those of you who chose to not use Spudlers but if you do, it makes it easy! Scroll down a little further for a picture of what the Spudlers package looks like in case you want to try it out.
- 8 Large Eggs
- 1 1/2 Cups Diced Hash Browns
- 1 1/4 Cups Cheddar Cheese, shredded and divided
- 3/4 Cups Onion, chopped
- 1/2 Cup Milk
- 1/4 Cup Parmesean
- 8 Slices Bacon, chopped
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Salt
- 1/2 Tsp Pepper
- 1/2 Cup Red Pepper, diced If you are using "Spudlers", you will not need to add onion or peppers as they are in the mix already
Preheat the oven to 350 degrees. Spray a 9" pie plate with vegetable spray and set aside. Cook the bacon, remove from the skillet, and drain out the fat except for 1 tbsp. Add the onion and peppers and saute until softened, about 3-5 minutes. Add the hash browns and cook an additional 5-7 minutes. If you are using Spudlers, then you add them to the bacon fat immediately and skip the onions and peppers.
While the hash browns etc are sauteing, add the eggs and milk to a large bowl and whisk well to combine. Add in 3/4 cup of cheddar cheese, Parmesan cheese, garlic powder, cooked bacon, salt and pepper and mix thoroughly. Fold in the hash browns gently and then transfer the mix to the prepared pie plate. If you are going to bake it at a later time, then cover with foil and place in the fridge. Once you are ready for it to go in the oven, top with remaining cheese (3/4 cup shredded cheddar) and bake, uncovered, for 35-40 minutes or until a knife inserted in the center comes out clean.
Cheesy Bacon Frittata is definitely a recipe to try if you are a cheese fan. We have also discovered in our house that adding a couple of dashes of hot sauce really makes this even more delicious! I should also mention that if you are feeling really ambitious, you could make the hash brown potatoes from scratch.
Fresh out of the oven, Cheesy Bacon Frittata is ready for you and your family to enjoy. This recipe will serve 4 large portions or 6 smaller ones. It would go great with a green salad or garlic bread or both!
