Chili is synonymous with a lot of life events such as game days, tail gate parties and potluck get togethers. For this reason, I know that most of you who are reading this are very familiar with chili and perhaps you even have a recipe that you like to use. However, I think that you should try a new recipe this time and try making it in your crock pot instead!
Cooking chili in your crock pot will bring the flavour to a whole new level. The different ingredients and spices meld together the longer that it’s cooked with the end result being a rich and delicious chili. The depth of the flavour of Crock Pot Beef Chili is really quite impressive due to the long cooking process.
Crock Pot Beef Chili is so easy to make with simple ingredients that you likely already have in your cupboard. I love that all you really have to do is cut up a few veggies, open up some cans, dump all the ingredients in and not have to worry about it until it’s ready hours later. I am also aware of the fact that I am posting this in the middle of the summer. Think of it this way, you’ve been enjoying a day at the beach or park with family or friends and the last thing that you want to have to worry about is cooking dinner when you get home. Instead, you are going to walk in the door and be welcomed with the amazing aroma of chili slow cooking in your crock pot. Dinner is served with minimal effort and zero heating up of your place as you don’t need to use your stove at all.
Crock Pot Beef Chili is a dish that you can really tailor to your own particular tastes. You can make it smokin’ hot or back off on the spices for a more mellow flavour. There are other options if you aren’t really into the spiciness of jalapenos. Try using Anaheim peppers instead of jalapenos for a similar peppery flavour without all of the heat. My latest discovery that I am in love with is “tamed” jalapenos in a jar like you would buy pickles. As you may have already figured out, I am not a fan of a lot of heat so these little gems were a great find and not just for chili! I love them on sandwiches and nachos. All of the same flavour of jalapenos without burning my mouth!

- 2 Lbs. Lean Ground Beef
- 1 1/2 Cups Onion, diced
- 4-6 Cloves Garlic, minced
- 1 Pepper, Anaheim or Jalapeño You can use either, depending on how much heat you like
- 2 15 oz. Can Red Kidney Beans, drained but NOT rinsed
- 1 15 oz Beef Broth
- 1 15 oz Can Diced Tomatoes, in juice
- 1 6 oz Can Tomato Paste
- 1 Tbsp Worcestershire Sauce
- 2-3 Tbsp Chili Powder *
- 1 Tbsp Dried Oregano
- 2 Tsp Cumin
- 1 1/2 Tsp Black Pepper
- 1 Tsp Paprika
- 1 Tsp Seasoning Salt
Prior to putting in the slow cooker, add beef to a large skillet and cook with the onions, (Anaheim or jalapeño pepper) and garlic. Cook for 7-10 minutes until beef is browned and vegetables are sorftened. Drain the fat off from the hamburger and transfer to the crock pot. I like to cook the beef ahead of time in order to get rid of a lot of the fat. Add the remaining ingredients and cook on low for 6 - 8 hours or on high for 3 - 4 hours. About half way through the cooking time, stir the chili and check the consistency. If it is too thick or thin for your liking, either add a little more broth to thin or more tomato paste to thicken. Serve with shredded cheese, sour cream and diced onions.
*Depending on your taste, I start out using 2 tbsp. chili powder and add more as you like.
Crock Pot Beef Chili can either be served by itself like you see in the picture below or you can add some delicious toppings like sour cream, shredded cheddar and diced jalapeños, just to name a few! This recipe will work with any number of tasty additions.
