Fiesta Chicken Mix

Fiesta Chicken Quesadillas are filled with ooey, gooey melted cheese and shredded chicken in a lightly toasted tortilla. The combination will create a fiesta in your mouth!

Ingredients

Slow Cooker Shredded Fiesta Chicken Mix

  • 2 Cups Slow Cooker Shredded Fiesta Chicken
  • 1 15oz Can Black Beans, drained and rinsed
  • 1 Cup Corn, frozen
  • 1 Cup Onions, diced
  • 1/2 Cup Anaheim Peppers, diced
  • 3 Cloves Garlic, minced
  • 1 Can Green Chilies
  • 1 Tbsp Taco Seasoning
  • 1 Lime, juiced
  • 1 Tbsp Olive Oil

Fiesta Chicken Quesadillas

  • 2 Cups Slow Cooker Shredded Fiesta Chicken Mix
  • 4 10" Tortillas
  • 2 Cups Cheddar Cheese, shredded
  • 1/2 Red Onion, sliced finely
  • 4 Tbsp Ranch Dressing
  • 2 Tsp Taco Seasoning
  • 2 Tbsp Cilantro, Fresh Optional

Instructions

Slow Cooker Shredded Fiesta Chicken Mix

  1. In a large non-stick skillet, heat the olive oil over medium heat.  Add the onions and peppers, cook for 3-5 minutes until softened, add in the garlic and continue cooking for another minute.  Add in the rest of the ingredients.  Be sure to combine them all together nicely.  Allow the mix to cook for about 15 minutes more. 

Fiesta Chicken Quesadillas

  1. Combine the ranch dressing and taco seasoning in a small bowl and set aside.  Lay the tortillas flat and evenly spread the ranch dressing mix over the four tortillas.  Evenly divide the Slow Cooker Shredded Fiesta Chicken Mix between the four tortillas, on one half of the round and then add the remaining toppings, the shredded cheddar should be the last addition and again, evenly divided between the four tortillas.  Fold the tortillas in half and gently press down to seal together.  Using a large, non-stick skillet that has been sprayed with cooking spray, add the tortillas in, 2 at a time, and cook for 2 minutes, then flip them over and continue cooking another 2-3 min until they are golden brown and crispy.  Transfer to a plate and keep warm until the other 2 tortillas are done.  Serve these with salsa, sour cream or guacamole.
